Tex-Mex Egg Bites
Ingredients
- 6 eggs
- 1/2 red pepper, diced
- 1-2 green onion, diced
- 2/3 cup shredded Tex-Mex cheese
- 1 tbsp taco seasoning, or make your own -see below
Taco Seasoning
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp oregano
- 1/4 tsp black pepper
Instructions

Preheat over to 350F.

Line your muffin tin with silicone liners or spray well! This recipe makes 6, but can easily be doubled for a full tray.

Mix all ingredients together and pour into the muffin tin.

Top with a little extra cheese if desired.

Bake for 20 minutes.
