Tex-Mex Egg Bites

Ingredients

  • 6 eggs
  • 1/2 red pepper, diced
  • 1-2 green onion, diced
  • 2/3 cup shredded Tex-Mex cheese
  • 1 tbsp taco seasoning, or make your own -see below

Taco Seasoning

  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp oregano
  • 1/4 tsp black pepper

Instructions

  1. Preheat over to 350F.

  2. Line your muffin tin with silicone liners or spray well! This recipe makes 6, but can easily be doubled for a full tray.

  3. Mix all ingredients together and pour into the muffin tin.

  4. Top with a little extra cheese if desired.

  5. Bake for 20 minutes.

  6. Allow the eggs to cool slightly before removing them. Store in the fridge or freeze for later!
