I asked on my Instagram account lately, “What is more difficult for you: Exercise or Nutrition?” The response was overwhelmingly, nutrition! And it’s no wonder.

Did you know that we have at least 200 or more thoughts surrounding food each day? That’s a fair amount of time thinking about food. Compound that with an overwhelming abundance of processed foods, a family upbringing that perhaps didn’t value healthy food, a hectic or busy life that yearns for fast and convenient, and any dysregulated feelings that are medicated with food and you’ve got a potential issue.

One way to start being more mindful about your food choices is to choose a day of the week to prepare yourself some healthy ones. This may mean you take a Sunday to plan out what your meals might look like in the upcoming week, so that you can ensure they are balanced in their macronutrients, and chock full of healthy micronutrients. I’m of the ilk that if I deprive myself from something that I want, I’ll just want it all the more and then perhaps overdo it on that particular food item. Instead, I practice moderation and portion control, but also healthy swaps! There’s almost always a way to make a tasty treat healthier and we have done that with today’s recipe.

It’s the season of mini Halloween chocolate bars! Instead of buying those, I like to have these on hand (stored in the freezer because they are better that way) for when I am craving chocolate, or need an afternoon pick me up. The large oats, pumpkin and nut butter will help fill me and the mini chocolate chips will satisfy my sweet tooth.

Pumpkin Chia Power Balls

Prep Time 10 minutes
Servings 16

Ingredients

  • 1 1/4 cup Old fashioned oats Buy uncontaminated oats for gluten free
  • 1/4 cup ground flaxseed
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp ground cloves
  • pinch sea salt Don't eliminate this step as it enhances the flavor!
  • 1/2 cup nut butter (almond or peanut)
  • 1/8 cup honey or maple syrup
  • 1/4 cup pure pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips Use the mini - a little goes a long way.

Instructions

  1. Mix all ingredients together in a medium bowl until well combined.

  2. Scoop 1 tablespoon into the palm of your hand and roll into a ball.

  3. Place on sheet, covered in parchment or wax paper, and let set in freezer or refrigerator.

  4. Can be stored in airtight container in the freezer or refrigerator.
