I just love the taste of anything with lemon! It actually feels bright, like springtime. My focus these days is on getting in as much non-processed foods as possible.  These totally fit the bill and so much better than a store bought protein bar.  No, there isn’t as much protein in each bar, but then be sure to add additional protein elsewhere in your day.

 

 

Lemon Coconut Protein Bars

Ingredients

  • 1 1/2 cup soaked dates Soak in hot water. Save some water in case mixture is too dry.
  • 2/3 cup almond flour I roast my almonds first, then make my own flour
  • 1 cup unsweetened coconut
  • 2 scoops vanilla protein powder
  • 1/2 tsp salt
  • 1 lemon; zest and juice
  • 1/2 cup almond butter

Instructions

  1. Blend together dates, lemon juice, almond butter, zest.

  2. In a separate bowl, combine almond flour, coconut, protein powder, salt.

  3. Add the wet to the dry ingredients and mix well. If mixture is too dry, add a little of the date water, or almond milk. This will be slightly sticky, but you should be able to roll a ball at this stage, or press mixture between two pieces of plastic wrap.

  4. I wanted bars, so I put it in between plastic wrap and pressed into a rectangle shape, on a cutting board. Stick the pressed out dough into freezer for 30 minutes before slicing into bars. Wrap individually as shown for easy grab and go protein bars.

  5. Store in freezer.
