Looking for a protein filled, no added sugar muffin?  Well, look no further.  This is a low carb, muffin with only 1/2 cup of “flour” for the entire recipe.  I used rice flour, but almond flour would be tasty and make it a paleo muffin! Part of my goal for 2021 is to stay far away from any processed foods.  Yes, it takes a bit more planning and effort to plan a prep day to prepare healthy foods, but your microbiome will thank you.

This muffin is light and delicious especially fresh out of the oven and is only 145 calories per muffin.  Great to have on hand for a quick snack and freezes well.  In fact, I recommend storing most baking in the freezer to keep it fresh for eating!

This makes a healthy and nutritious snack for your kid’s lunches or in the afternoon with tea for yourself.

Banana Chocolate Chip Muffins

A low carb, no added sugar muffin that actually tastes good!

Ingredients

  • 4 mashed bananas
  • 4 eggs
  • 1/2 cup almond butter try peanut butter
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla
  • 1/2 cup Perfect flour blend (Rice Flour) or Almond flour (what I used) Use almond flour to make this recipe paleo
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup no sugar added dark chocolate chips Lily's - sweetened with stevia

Instructions

  1. Preheat oven to 350 F. Mix together the first 5 ingredients (wet mixture).

  2. Add remaining ingredients and then stir together with a spatula, scraping the sides of the bowl while mixing so everything is mixed together well.

  3. Scoop batter (should be a bit runny) into muffin tin with liners. This recipe makes 12 muffins. Bake for 20-25 min. Check for doneness with toothpick which should come out clean.
