A low carb, no added sugar muffin that actually tastes good!
Preheat oven to 350 F. Mix together the first 5 ingredients (wet mixture).
Add remaining ingredients and then stir together with a spatula, scraping the sides of the bowl while mixing so everything is mixed together well.
Scoop batter (should be a bit runny) into muffin tin with liners. This recipe makes 12 muffins. Bake for 20-25 min. Check for doneness with toothpick which should come out clean.
