Ingredients

  • 3 small bananas, mashed
  • 2 eggs
  • 1/2 cup unsweetened Greek yogurt
  • 3 tbsp maple syrup
  • 1 cup shredded carrots
  • 1 tsp vanilla
  • 2 cups oat flour I make my own by blitzing large flake oats in a magic bullet
  • 2 tsp baking powder
  • 1/2 cup chopped dates
  • 1/2 cup walnuts or pecans
  • 1 tsp cinnamon
  • dash salt

Instructions

  1. Add bananas, eggs, yogurt, maple syrup, carrots and vanilla to a bowl and mix well

  2. Add in chopped dates and walnuts

  3. Add oat flour, baking powder, cinnamon and salt and stir until combined

  4. Pour into a parchment lined loaf pan

  5. Bake in a preheated oven - 350F - for 45 minutes

  6. Wait until fully cooled, then slice, wrap and freeze
