The Ultimate Pumpkin Pancake

 

You’ve got a healthy eating routine, which is fantastic. Every now and then, you might find yourself craving those less-healthy treats, like pancakes. In our cookbook, ““People Like Us Make Food Like This”, Tracy has crafted a go-to recipe known as the Protein Pancake. It’s a speedy, straightforward recipe that’s packed with protein, nutritious, and serves as an excellent breakfast choice.

We have tweaked the recipe and created a delicious Pumpkin Pancake.  It is a healthy version of the Protein Pancake, it’s also quick and simple to make, high in protein, and one could argue, “fluffier”  than the original.  It has a nice taste of pumpkin spice that everyone loves this time of year.  So if you’re bored of the “Go To” pancake and you like pumpkin, give this pancake a try.

A delicious topping that contains protein for The Pumpkin Pancake is plain Greek yogurt.  If you don’t like the sourness of plain Greek yogurt, you can add one drop of this English Toffee Liquid Stevia.  You could use maple syrup or honey to sweeten the yogurt too, but I though this was a great alternative.

The Pumpkin Pancake

This is a one serving Pumpkin Pancake, that is healthy and contains protein.

Ingredients

  • 1 tbsp large flake oats
  • 1/4 tsp pumpkin spice see below for recipe
  • 1/4 tsp vanilla
  • 1 egg
  • 2 tsp almond flour
  • 1 tbsp almond milk
  • 1/4 tsp baking powder
  • 1 tbsp pure pumpkin
  • 1/4 tsp maple syrup optional

Instructions

  1. Place all ingredients in a magic bullet or blender and blend really well.

  2. Heat a skillet on medium heat. Spray olive or avocado oil on pan if needed.

  3. Pour pancake mixture into skillet. Bubbles will appear and some will pop. Flip when the edges are drier looking and the underside is browned.

  4. I used plain greek yogurt with a drop of English Toffee flavored stevia (recommend by the way - way better than just liquid stevia), to put on top of the pancake. Also, I sprinkled pomegranate seeds (good fiber source), fresh raspberries and pumpkin seeds on top. I may have also drizzled a teaspoon of maple syrup on top, but I'll never tell. It's certainly not necessary though. It's quite delicious without.

    Note: You could also eliminate the maple syrup from the recipe if you were wanting a "sugar-free" pancake.

Recipe Notes

Pumpkin Spice Recipe: 

3 tbsp ground cinnamon, 2 tsp ground ginger, 1 tsp nutmeg, 1 tsp ground allspice, 1 tsp ground cloves

Stir together. Makes almost 5 tablespoons of Pumpkin Spice.
