We lived next door to a chef for a few years and one of the tricks of the trade that he taught me was that lemon brightens the flavor of everything! A little lemon zest and 1 tablespoon of juice in these protein balls, and it’s a whole new game.

Keeping healthy treats on hand is a game changer for me.  Knowing that these are high in fiber, protein and healthy fats, make it a no brainer to fire these up! When I choose foods these days, I am truly looking to get the most bang for my buck (nutrition-wise). I look for high fiber foods (this builds the microbiota in my gut, causing a more diverse eco-system). I look for anti-inflammatory foods (insert turmeric). These don’t taste like a curry dish with turmeric in it, so not to worry, but, you do get the wonderful benefits of this superfood, like fighting cancer, inflammation, and depression. I look for foods to keep me fuller, longer. The healthy fat from the almonds/almond butter will help to do this.

Chia Lemon Protein Balls

Ingredients

  • 1/2 cup almond flour I used my own roasted almonds, pulsed in a Magic Bullet
  • 1/3 cup coconut flour
  • 1/3 cup vanilla protein powder
  • 1/4 cup chia seeds
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp turmeric
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil

Instructions

  1. Mix all ingredients together in a bowl. Roll into 20 balls and store in freezer.
