Bacon Cheese EggsHave you tried the new Sous Vide Bacon and Gruyère Eggs at Starbucks’s recently? I was in there last weekend during my daughter’s dance competition and thought I would try them for a low carb breakfast option.  I was actually sitting across from my friend who is a dietician and who had just googled the ingredients. I asked her what her thoughts on the nutrition were and she gave it a thumbs up! I came home immediately and attempted a copycat version.

Let me just say that I have made them 3 times already, and in batches so that we can have them during the week as an easy grab and go snack or breakfast! I love them.  You can always leave the cheese out for a healthier, lower fat version.  I served it as shown, with the avocado, and I was full afterward.

Anyway, give it a go…it’s always nice to add something different into the routin

Copycat Starbuck's Turkey Bacon and Cheese Sous Vide Eggs

I love the sous vide eggs at Starbucks so this is my at-home attempt and they are delicious!

Cook Time 6 minutes
Total Time 8 minutes
Servings 4 people

Ingredients

  • 4 eggs
  • 1/2 cup cottage cheese
  • 1/4 cup shredded cheese (calls for Gruyere, I used Tex Mex)
  • 1/8 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp garlic salt
  • 1/2 tsp hot sauce (optional)
  • 4 slices cooked turkey bacon -halved

Instructions

Place all ingredients except bacon into a blender and blend until smooth. Spray 4 small ramekins with non-stick spray. Place 1/2 slice turkey bacon in the bottom of each. Divide egg mixture among the 4 ramekins. Place other half turkey bacon on top (it will likely sink).

Place ramekins in mivcrowave along with a mug of water. Cook on high for 4 1/2 minutes. Let sit in microwave an additional 2 minutes before removing. Use hot mitts to remove. Use a knife and slide around the egg and turn upside down on a plate. Enjoy!
