Turkey and sweet potato poppers

Back to school=Back to school snacks and lunches! Ugh!

Haha, well, it doesn’t have to be when you plan ahead and whip up a batch of these Paleo Turkey and Sweet Potato Poppers. My kids loved them and they are a healthy, well-balanced lunch or anytime snack.  So, I would definitely make a double batch next time and freeze them for an easy grab and go protein for myself as well.

 

Recipe:

Instructions:

  1. Pre-heat oven to 400F, grease a cookie sheet with a little coconut oil.
  2. Mix all ingredients together and roll into small balls, then slightly flatten with your hand (I got 20).
  3. Cook for 24-28 minutes, turning half way, and broiling for 1-2 minutes at the end to crisp to tops.
  4. Serve with homemade guacamole or fire roasted salsa.
2 cups shredded sweet potato or yam
I found this coconut flour at Superstore!
Mix everything together and roll into balls.
Serve with fresh-cut veggies and guacamole and salsa!
Seriously good.
