You have pure pumpkin (full of vitamin A,C, and a great source of potassium), oats (high fiber, magnesium and protein) nuts and nut butter ( healthy fat, protein, potassium, magnesium) and dark chocolate (phytochemicals which fight free radicals).

Plus, they are super simple. Mix all ingredients in a bowl, roll into balls and freeze! I grab two as a quick snack mid morning or afternoon with tea.

Pumpkin Energy Balls

Great for an afternoon snack!

Prep Time 10 minutes

Ingredients

  • 1.5 cups quick oats uncooked
  • 1/2 cup pumpkin puree -unsweetened
  • 1/3 cup all natural nut butter
  • 1/3 cup maple syrup or honey
  • 1 tsp pumpkin pie spice
  • 1/4 tsp vanilla
  • 1/2 cup chopped nuts
  • 1/8 cup cacao nibs
  • 1/8 cup dark chocolate chips
  • 1/8 cup sunflower or pumpkin seeds

Instructions

Mix all ingredients in a bowl. If mixture is too dry, add almond milk, a tbsp at a time. Roll into 1 inch balls and place on tray. Freeze. Store in freezer until you eat them.
